3 Easy Thanksgiving Recipes + Pairings

A Fall Festive Easy Meal - Chicken with Caramelized Onions
Ingredients
4 chicken breasts, sprinkled with salt and pepper
1 thinly sliced onion
1 tablespoon red wine vinegar
1 tsp garlic
1/2 cup Harpers Harvest Mandarin Apple Fruit Spread. This is an organic apple and organic mandarin orange fruit spread with ginger, cinnamon, nutmeg, and clove - sold at our tasting room!
Directions
Sauté onion in lightly oiled large skillet over medium-low heat for 10 minutes to caramelize onions.
Raise heat to medium-high, add chicken to pan, sauté' for 8-10 minutes, until the chicken is done.
Remove chicken and onions to warm plate.
Deglaze with 1 tablespoon vinegar ad add garlic.
Cook for one minute, and then add fruit spread.
Salt and pepper to taste, and cook for 2 minutes.
Return chicken and onions to pan, stirring to coat.
Keep warm in oven, or serve immediately.

For the Leftovers - Turkey Curry Soup
Ingredients
1/2 onion chopped
1/2 red bell pepper
2 tsp curry powder
2 cloves minced garlic
1 cup chicken broth
1 can coconut milk
2 cups chopped cooked turkey meat (chicken can be substituted for turkey)
2 cans rinsed garbanzo beans
1 tsp Sriracha Chili Sauce
2 tbsp honey
Chopped cilantro as garnish (optional)
Basmati rice
Directions
Sauté' onion and bell pepper in lightly oiled large skillet over medium heat until onion is caramelized, about 8 minutes. Add garlic and curry powder to brown for one minute. Add broth, coconut milk, turkey meat, garbanzo beans, sriracha chili sauce, and honey. Simmer for 10 minutes. Serve in bowls over rice. Allow guests to add more sriracha chili sauce, honey, and cilantro garnish.
Vegetarian option:
Omit Turkey and substitute chicken broth for vegetable broth for a vegan curry soup.
